
Even though I try my best to save us money by sticking to a tight grocery budget of around $160 a month, I really think I could increase our savings by doing a better job of menu planning. Sure, I usually have some idea of what we are going to eat but a lot of nights, I'm just down in my stockpiled pantry asking myself, "What should we have for dinner tonight?"
I saw this Menu Plan Monday on a couple of blogs that I visit and I thought I'd give it a try. What a great way to get me to commit to something; publish it on the blog! :) So here's my first round at menu planning. We'll see how it goes:
Monday: Tuna Casserole
Tuesday: Homemade Chicken Pot Pie**
Wednesday: English Muffin Pizzas
Thursday: Leftovers
Friday: "Breakfast for Dinner" i.e., pancakes, bacon, eggs, etc.
Saturday: Tortellini and an Antipasto-type salad
Sunday: Taco Chili and Appetizers (It's Super Bowl Sunday!)
**I plan on publishing this recipe on Bakin Geek after I make it.
