Simple Recipe: Taco Chili
I made this for our playdate this week and was asked by all for the recipe. So I thought I might share it with you,too. This comes from another of my favorite books The Freezer Cooking Manual from 30 Day Gourmet - A Month of Meals Made Easy. (You can download an 8 page sampler there.) They teach you how to make enough meals in one weekend to last an entire month! When you purchase the book, you also get the username/password to their online recipes on their website! Here's the Chili recipe (for 12 servings!!)
2lbs. of hamburger
1 package of taco seasoning (I use Old El Paso 40% less sodium)
1-28oz. can of crushed tomatoes
1-15oz. jar of salsa (I used Chi-Chis Thick n' Chunky Medium)
1-15oz. can of corn, undrained
1-16oz. can of kidney beans, undrained
1-15oz. can of black beans, DRAINED and rinsed
Optionals:
8oz. of sour cream
1 cup of shredded cheddar cheese
1 bag of Tostitos Scoops chips (in place of a spoon!!)
Brown hamburger. While the hamburger is cooking, add all the rest of the ingredients into a large pot or crockpot. Drain any fat off the hamburger and add to that pot. Stir to combine. Heat until hot and bubbly. Serve with "optionals." I highly recommend the scoop chips in place of using a spoon. It makes it taste more like a taco. Freeze up any leftovers in Ziploc bags, marking with the date and "Taco Chili." (Don't add optionals to what you freeze!)

That sounds yummy. When I think of chili I think of a lot of time cooking it. But this is fast!
ReplyDeleteLast year, we made this every weekend when a Bears game was on. We never got sick of it! The recipe book also has a great recipe for Pizza Meatloaf, Veg/Beef Soup and Turkey & Noodles. (Some of these might be from the website.) So if you like any of those, the book would be worth checking out at your library.
