Recipe Challenge: Buttery Lemon Bars

So last week, I was going to try to make homemade dill dip. Unfortunately, I wasn't able to find a healthy recipe for it. Every one I found online called for sour cream and mayo. And there's no way I'm feeding that to Nathan. BUT, I was lucky, in that some fruit dip powder that I ordered from my nephew's school arrived. So Nathan and I whipped up a batch of that and have been deliciously dipping bananas and apples all week. So I did get in my new recipe trial for the week.
This week, my taste buds were tweaked by the Buttery Lemon Bars recipe from MyRecipe.com's Cookie Countdown newsletter. I'm not usually a big fan of lemon but I could just picture eating a warm piece of it out of the oven with a nice big cup of decaf hot tea. So, that is the recipe that is on my agenda for the week. We'll see how it goes.

I've been a vegetarian for 12+ years and when preggo with Lil last year I could NOT stop craving red meat. Odd. It hasn't gone away! So I eat venison that my husband brings home (processes it himself)...and it is the only meat I let my kids eat as well (oh..and fish)...now I am venturing into the world of chicken. We are going to Sam's today to buy hormone/anti free whole chickens (2/$8) and then I'm going to try a reciep I found at momadvice.com for Homemade Chicken Enchiladas and Homemade Enchilada Sauce! We shall see.
ReplyDeletePosting those bars is just WRONG btw! :) I looooove those and I'm trying to watch what I eat. I have no self control so I can't make them and "just eat one". *sigh* I"ll live vicariously through you!
I could probably live without red meat, too, but Rich is such a red meat person that I hate to make dual meals. But for me, I'd pick veggies over meat any day!
